Our green olives are of the Koroneiki variety which is well-recognized for its characteristics such as its small size, green in color, very fruity with an emphasis on herbal-green fruitiness, and it has medium bitterness and pungency.
These cracked olives are cured in a spring water, salt, lemon juice and olive oil brine. They should be stored in a cool dry spot and can have a life span of two years. They should always be covered in olive oil on the top of the jar
Greek olives pair nicely with cheese, baked in bread, toppings on a variety of dishes or as an addition to a cheese board.
